Normally smoke at 240 grate which is around 255 dome on the old style XL. Wanted to make sure I could pull it off and go into the cooler (some say the butt hole) at 3:00 so I started at 275 at 4:00 am and throttled back to 240 just after lunch. Went into the cooler around 3:30.

Sorry Frank but given a choice between your butt or them bugs I'll take the bugs! :laugh: Till Katrena we had several places that you could snag all you eat for $20 or so. Since then two fifty a lb or so. Gal in center of pic sitting daughter? Looks kind of like your wife. Both pretty.....not like you! :laugh: You coming to Oklahoma??! Still haven't heard. :woohoo:

Not going to make it this year. The Thursday following the fest we will be heading to Hawaii with the Chickens and some of the Chicken relatives.
Of course we are only going because Spring Hen is going. :laugh: -

I haven't used them but my niece had 200# shipped to California from these guys. http://www.lacrawfish.com/
She was completely satisfied. I checked out the website and they say they have their own ponds and ship their own crawfish, with a guarantee of live crawfish, instead going through brokers.
Not cheap but a once a year treat ...... -
