Welcome to the forum.
What eggcessories did you get? -
Smoking is a great way to break in the egg as you wanna stay away from high temps for the first several cooks.
My only advice is do a shorter smoke (chicken, ribs) so that you can monitor the temps instead of worrying about an overnighter as your maiden voyage.
Would also recommend getting that big bad boy stabilized at your cooking temp for a good 30 minutes before you start cooking....just to make sure you've got her dialed in.

It will have the EGG Nest, EGG Mates, a cover, Plate Setter, Ash tool, Grill Gripper, Fire Starters and a 10lb bag of Ozark Oak Lump Charcoal.

Congrats on the XL, and welcome to eggworld.
Ribeyes and bakers with a nice cab would be a
great break-in to celebrate the new addition. -
You got plenty to work with then. You may want to get a meat thermometer. Most folks here use an instant read thermometer called thermapen by ThermoWorks.com but you may want to get a cheaper one for now. You also may want to get some rubs.
You can do a nice butterfly chicken cook. They are great.

Did you get your Egg at Elliotts Hardware?
-
Yep. We are big fans of Elliott's. The wife's boss's son is a Boy Scout and he gave us one of those Boy Scout Discount Cards. Saved us 10%.
Been eyeballin' them for a couple years. My Sis and BiL down in Austin had one built into their outdoor kitchen. The ribs and chicken he made sold me on the "need" to have one. -
Welcome abroad and may you have many great eats from your egg.
What you can cook on the egg is limited only by your imagination
When I purchased my egg my dealer told me to break it in by doing a few cooks at temps below 375. He said that would help set the gasket. I did chicken and fish for the first few cooks and the most important, I learned how to regulate and stabilize the cooking temperatures.Large, small and mini now Egging in Rowlett Tx -
I'll be doing a demo cook there next Saturday. If you're free, stop by and give me the business. Noonish.

Yep Elliott's is a great store. We urban pioneered a house in the oak lawn area and my husband lived at that store. Since then we have lived on the east coast, the west coast and now back home, but we never found another store like Elliott'sLarge, small and mini now Egging in Rowlett Tx

I usually begin serving around 11.

Congrats and welcome to the forum. My first cook was hamburgers, and they were great. Actually, my first several cooks were burgers, chicken, and ribs. Each time I got more adventurous and was amazed at how much better everything tasted from the egg. I hope you enjoy your egg - I'm sure you will. Looking forward to your posts and pics!

I'll be at the Elliotts in Plano, not the one in Dallas.
-
11 o'clock, huh?
Just might have to swing by. -
Welcome and come on down to the Salado Gathering on the 26th!
It's a long time until the Plano Gathering in November...
And you will need to meet your Texas and OK and NM and AR and LA neighbors
-
WElcome to the forum! The best thing to do is to cook something on a low temp to cure the gasket. How about smoking ribs! :woohoo:
-
Hi! Congrats on your purchase.
My advice is to start with at least 20 lbs of on-hand lump for an XL. It may take more than the 10 lb bag to get the lump up to the the top of the firebox for your first cook.
Good Luck! -
Welcome to the forum and the cult.
As Desert Oasis Woman said please come to Salado on March 26th (see info below my name)
My Daughter (Aggies as well) and another couple will be coming from Frisco.
You can learn so much in that one day on how to use the egg and what all to cook. Plus tips on what will be your second egg
