Fresh caught Mullet......

I didn't catch it, but bought it right off the boat. 5 boneless filets to smoke and make into smoked mullet spread.
The filets in a foiled pan, sprinkled with some DP Tsunami Spin, smoked over pecan wood at 235 for 2.5 hours~
Chopped up kinda fine:
Chop onions, celery and add some sweet pickle relish -
Add in the mullet, REAL mayonnaise, Adobo, fresh cracked pepper and mix well.
Served with saltines and Crystal hot sauce, it's a classic. Please excuse my brothers hairy arm

Nice - Mullet spread ROCKS!!! Is it in St. Pete that there is that stand that sells Mullet spread? We used to drive over from Tampa on summer evenings just to get mullet spread and drink a few beers....love it!!!!

It's called Ted Peters and they have been in business since 1940's or so. It's right near St. Pete beach, and my family has been going there for 30+ years. This is actually their recipe, so whenever I run across fresh mullet I like to make my own. The place was featured on a Diner's, Drive-ins, and Dives -

That looks great Faith. My ex-brother-in-law had a condo on St Pete Beach right at Blind Pass and I have been to Ted's a few years ago. One of those neat places you always remember and go back to when you can.
We catch mullet up here pretty easily, but I use it for bait, never tried to make dip, but you have inspired me! -

Fantastic Faith! That's a great looking Mullet Spread. There used to be an old shack just down the street toward Fort Myers Beach that sold smoked fish. It may still be there. My mother would get the smoked mullet there and make spread. I like your recipe better. I don't think mom used the relish or the hot sauce and I bet they help. The mullet my mother would use was heavily smoked, more then just a seasoning and more of a smoke cure and it was very strong, not my favorite. Yours looks great!

Faith's Mullet Spread is one of the more popular ways to fix Mullet today. I think in the past it was enjoyed more often as a fresh fish fillet like we would grouper or snapper. You never see it prepared that way in the restaurants.
The Mullet has been a a very controversial issue here in Lee and other counties since the gill net ban was enacted in 1995. It was a long standing tradition of generations of fishermen to fish for the mullets with very long gill nets in shallow coastal waters from shallow draft skiffs. The state banned the gill nets and many people lost their way of life. While it was a good environmental ruling it was disastrous for the mullet fishermen.

One spanish name is "Lisa" and I think the most popular one.
Here in Florida and some Caribean islands "Lisa" is used, however if you are in Mexico the colloquial name may differ. -

faith, looks great....on all our dip we make, we use the same stuff you use but we add lime juice to it......adds a kick and makes the flavor better, in my opinion... again, great looking food.
