keep it simple, Load it up. fire it up . let it settle out at 400-500 for 20-30 minutes .
depending on thickness and how you like it, 5-6 minutes a side.XL Walled Lake, MI -
Chicken is easy and turns out good for a first cook...Good luck.

Thanks stevesails, was going to try searing then dwell, but wasnt sure how the temp would react in these conditions during the dwell...keeping it simple today !

Although no one knows for sure a lot of folks will tell you to not go over 400 degrees on the first few cooks to protect your gasket. I don't think the official instructions tell you that (or mine didn't) and as many gasket problems as there have been the folks at BGE must not think that a break-in is necessary.
I did chicken (individual pieces) my first time so it would be an inexpensive lesson if I messed up. They turned out great!

Although I have never been in that cold of weather I don't think the weather really affects the Egg temps at all. Now if you are talking about the steaks sitting out in that weather during the dwell that could be a problem. I would take the steaks inside for that portion of the cook.

Agreed, my instructions didnt say anything about break in time, did some reading about it in the forums, and with temps getting to minus teens around here we'll see if I see the same. cold temps and glue usually not a good thing. Thanks for the tips.

I agree with YB. Spatchcock chicken is veryyyy hard to beat. The problem with a problem is that you don't know it's a problem until it's a problem, and that is a big problem.
