Twas the day before Christmas
And all through our household
The pizza dough was kneaded
And waiting for yeast to take hold

The dough started rising
And filling the bowl
It would make a huge pizza
If it was used whole

So I cut it in half
And left half to rise
To be tossed in the air
Till it reached the right size

The charcoal was laid
In the big egg with care
In hopes that a pizza
Soon would be there

The fire it was lit
With a MAPP gas torch
And I had to be careful
Not to burn down the porch

The First Mate and I
Were diligently chopping
The Garlic and onions
That would go on as topping

Then came pepperoni
and Olive and Portabella
some Parmesan cheese
and then Mozzarella

On Charcoal, on platesetter,
on green feet, and on stone
And real soon the Pizza
Would be sliding right on

A hot 600 degrees
is the temp we were seeking
and it was all I could do
to keep not from peeking

When the temp was achieved
And the egg had stopped smoking
I slid on the pie and closed up the lid
For a nice crispy crust is what I was hoping

Five minute passed
and then I start looking
down through the top
to see how it was cooking

The cheese it was melting
The pepperoni was curling
The dough on the edges
Was rising and charring

Then I knew in a flash
‘twas time for the pulling
I opened the lid of the egg with great care
Fear of flashback was why I was stalling

The large egg was open
and the pie it looking great
I slid the pie off the hot pizza stone
And slid it right on to my plate

The pie was delicious
The crust was just right
And I knew at that moment
It would be a great night

And have no fears
For the egg will cook well
For many, many years.
