Hey Newbie (LOL) try the search forum...this is from Desert Filly herself

You asked for zucchini bread..here goes...it is the best.
    3 eggs
    2 cup sugar
    1 cup oil
    2 cup flour
    2 cup grated zucchini
    1 tsp salt
    2 tsp baking soda
    3 tsp ground cinnamon
1 cup chopped nuts ( I use pecans)
    2 tsp vanilla
    1 tsp instant coffee

Beat eggs, sugar, and oil. Stir in flour mixed with salt, soda, cinnamon and coffee. Add zucchini , nuts and vanilla. Bake in 2 greased loaf pans at 350 for 1 hour.

I've not made this on the egg....but it's gonna happen this weekend.

No fair Kim....you didn't give me enough time to get the cook book out. Yelp, that's the recipe all right. Now...I need to make some myself.
    Enjoy all.
btw...where do I have it posted?
