EGGchiladis & Poblano Rellenos

It's funny how one post can change a guys mind.... Yesterday in a chicken thread, I posted the recipe for these poblano rellenos. I had all the fixins' so they were on for dinner. Along with some cheese/onion/cilantro enchiladas in green sauce, it was a great meal. And meatless too.

    I keep forgetting to try your carving style on single peppers.... I had these halved, then remembered it.

    Here is the link to the poblano recipe in an earlier thread.

    The enchiladas were very basic, I warmed corn tortillas one at a time, used sweet onion, cheese and cilantro for the filling, and rolled them up.

    In the bottom of the pans I put some extra onions and a few 1/2" strips of tortilla to insure no sticking, then added some green chili sauce.

    Then the rolled enchiladas went in, some cheese added atop them, and the rest of the sauce added to the pan.

    Everything went on at the same time, so cook time for both was about 40 minutes at 325°.

    That looks SOOOOO much better than the Mexican I paid $40 for yesterday for just me and my wife at dinner (noon)!!! First class cook. :woohoo:
