<p />Tonight was such a pleasant night (a balmy 48 degrees) that it made a perfect backdrop for some fresh pizza margharita. I got home from a great day of teaching and whipped up a quick pizza dough and made the pizza shown here. It is simply dough (recipe to follow at, grated pizza cheese (mozarella, parmesan, romano), and tomatoes. I sprinkle some basil (fresh is better) and oregano on top and give it a quick spray with some EVOO. On the egg at about 550* till done! [p]The pizza in this picture was the one I gave wifey ... my MD has "suggested" that I drop a few pounds - like 40 - so my version used less dough, fat free mozarella, and tomatoes with spices. Even that was good. Had just a touch of smoke with some pecan that was left in the egg from my most recent cook.[p]Life is good![p]Doc
