<p />Just left the kitchen after finishing a marinate/rub for a rack of baby-back ribs for tomorrow’s dinner - Mexican Oaxacan-Style ribs served with fresh salsa - sounded good - the ribs will be on the BGE most of tomorrow afternoon. Started with the book's recipe and added a little black pepper, red pepper and cilantro.[p]The original recipe came from "The BARBECUE BIBLE by Steven Raichlen" - that's also where I found the enchilada recipe. Reviews are available at Amazon - I bought my copy at a local kitchen store.[p]Tomorrow evening I'll post the results and the recipes that were used. Still think we need a Mexican BBQ Section under recipes.[p]
