A local establishment, Iron Hill Brewery, makes a brie & canadian bacon pizza. I figured it would be good on the egg and it was.

    I wouldn't say sweet but pretty mild and creamy. Brie really works well on the egg, sucks up the smoke.

    Did you use any wood for additional smoke?

    No I didn't but the bacon was already smoked and I didn't want to overdo it.
