    140-145 (a certain hurtin' chef will say 137) Foil it and lest rest for a 30 minutes or so. It will climb 5 degs or so while resting.

    My wife is old school when it comes to pork...I cook ours to 165 then foil..on the BGE it is still very moist...

    I like to pull mine at 150f and then a long rest.
