My sister gave me a cooking technique for Hot Wings. Have you tried it? She deep fries the wings for 15 minutes at 400 degrees. Pulls the wings and sauces and cooks on the egg until the sauce has carmalized. Any Pros or Cons to this method? She said it makes Crispy wings.

I do just the opposite, cook on the egg untl almost done, then finish off in the fryer. Then into the wing sauce..I think any of these procedures will result in good wings. I like the sauce from Suck Creek Wings..

Tonight is my trial run. I think I might try out both methods. Do you cook in the deep fryer at 400 or 350?

I like to finish off in oil (preferably peanut oil) at around 400-450..doesn't take too long.

I do mine on the egg. About an hour indirect at 400 until done, then I toss them in sauce and put them back on the egg for 5-10 minutes.

I've done the "unfried" wings from TNW (I think). Basically milk and egg wash the wings, dredge in equal parts flour and cornmeal,refrigerator for an hour to allow the coating to firm up and onto the egg indirect about 275 for about an hour to 90 minutes turning after about 45 minutes. Sauce them with 50/50 mix of Frank's RedHot sauce and butter.. The fat is rendered out and they are very crispy and not greasy. Took a bunch to a block party recently and everyone thought they were fried. Delicious.

Those lemon pepper wings look delicious! I will be trying those this weekend. How do you season them? Do you just use lemon pepper seasoning? -
I cook them until done, then toss in a little melted butter and a good dose of lemon pepper, then back on the grill for about 5 minutes to crisp them up.

Well the wings turned out great. My son even said these were the best wings he has ever had. I will be doing this one again.
