Tomato recipe I haven't made in a long time

I made this yesterday, after visiting the local farmers market. We were having a pot luck lunch at work, so I brought this. Sorry, no pics.

Tomato Bowl

This was my Mom's recipe. For all you home grown tomato gardens, this is a great way to use up products. I also add sliced onions and cucumbers for a little variety.

Ingredients
1 cup chopped fresh parsley
¼ cup olive oil
2 Tbs cider vinegar or red wine vinegar
2 Tbs prepared mustard
1 tsp sugar
1 tsp kosher salt
½ tsp pepper
1 clove garlic, minced (fresh is best)
6 firm, ripe, small tomatoes, sliced

1 Directions
2 Combine first 8 ingredients, mixing well. Place tomato slices in serving bowl and add dressing. Cover and let stand at room temperature 20 minutes before serving.


Yield: 8 to 10 servings
