Fri Night Roast Beef Sandwich

With the help of Chubby's gratemates in my small Egg I was able to devour this. Used a 2.75 lb bottom round roast with sweet vidalia onions and mushrooms for the end of work week dinner. Stable at 330 and pulled to high(128 internal)for my taste, but still delicious.
Used a couple of bags of these smoking pellets. I won this assortment of pellets at the Texas Eggfest a few years ago and didnt open it until now!
20 min into cook
Done. then wrapped in foil as i did the veggies

    Not as rare as I prefer- got occupied during cook and pulled it to late, but still enjoyed every bite.
