if you need to adjust the temp. after the meat has been on awhile do you use the lower vent or the top vent. thanks for any replys.

Either will accomplish the task...typically the lower vent is used for larger adjudtments...say 50° and the daisy wheel will be more useful for lower adjustments...10- 30°...not really sure why you would "want" to adjust your temp once stabilized...but for whatever reason what I said should get you by....and be a little patient with your temp rises as you may very well overshoot your desired temp

Good advice Wess, the only thing I would add is don't mess with both at the same time or you'll end up chasing your taget temp. through the whole cook.
