<p />Rubbed this 2 pound yellowfin tuna steak with EVOO and sprinkled on a little DP Shaking the Tree and seared it 2.5 minutes on each side at 550. The shrimp were soaked in Mojo for about an hour, then sprinkled with DP STT, and grilled on skewers at 400 for 2 minutes on each side. I'm so stuffed I can barely walk.[p]There's more tuna left over than I was able to eat...[p]

Dang. That's purty. You got some major searage on that tuna still keepin' it nice and rare. It looks perfect. Glad the rub worked out.

BBQBluesStringer,[p]I've had dinner just a little while ago, but your left-over tuna looks so good, I'm ready to grab it off the screen! Nice work, and even nicer presented on the Fiestaware. [p]gdenby

    Car Wash Mike,
Yeah. I definitely missed it. I am able to read only a handful of posts each day. It hurts me to let so much good info whiz by. I dream of the days I could read every post. Maybe again some day soon.[p]Rubs in St. Joe? Actually we did indeed just pick up a dealer there.
    Cheers mang

  • Nature Boy,
without a doubt, shaking the tree on a seared tuna steak is about as good as it gets. . .my gang just rolls their eyes wheneve i do it now .. . .simple shake the STT on the tuna, do a nice hot sear (around 600 degrees for about 1 1/2 - 2 minutes like kelly did). ..when i make the flip i put a pad of butter on the steak. ..don't have to worry about the butter burning, cause after only a minute or two, its still finishing melting when you pull the tuna steak off the grill. ..really works out great. ..

BBQBluesStringer, that's PERFECTLY DONE! sorry I'm yelling but I just had some fresh ahi (tuna) caught by my neighbor so I'm a little excited.
He went up to the marshall islands and came back with some nice stuff. Looks like yours![p]good job. Most folks overcook it.[p]aloha,[p]Greg
