Sausage & Irish Bacon Question

Got a great deal on whole pork loins, wound up with way more than I'll ever cook in the next 6 months. Anybody have a good recipe for homemade Irish loin bacon? How about loin for sausage, any good or is it too lean by itself?[p]Thanks,

Citizen Q:[p]If you cannot find a recipe for Irish bacon, try Reg's Canadian bacon recipe. You will find it on the Dizzy Pig site. I have a case of loins sectioned and brining for smoking on Sunday.[p]Pork loin is too lean for sausage, but they are great thick sliced, marinated or seasoned and grilled as steaks.
