MMBE,[p]The rolled/stuffed flank came out beautifully. Did it mostly at 400 dome temperature for a little longer - maybe 5-7 minutes - than the 45 minutes you suggested because my thermopen showed slighly lower temps than I thought ideal for a medium. But the taste was great! The sweetness of the peppers nicely offset the slight saltiness of the ham and the overall effect was terrific. My highly critical spouse thought it was definitely worth while and that it will make a wonderful party dish! Now I have to work on the sides . . . [p]
