MMBE,[p]The rolled/stuffed flank came out beautifully. Did it mostly at 400 dome temperature for a little longer - maybe 5-7 minutes - than the 45 minutes you suggested because my thermopen showed slighly lower temps than I thought ideal for a medium. But the taste was great! The sweetness of the peppers nicely offset the slight saltiness of the ham and the overall effect was terrific. My highly critical spouse thought it was definitely worth while and that it will make a wonderful party dish! Now I have to work on the sides . . . [p]

glad you enjoyed it. .. its hard to test this with a thermapen cause you don't always know if you are hitting meat or peppers . . .and i'm glad your sppouse enjoyed as well. ..i'd sure hate to have her say "don't ever listen to that max character again!" heee[p]here is a link to a side that would go very well with the flank steak roll. . . potato gallette .. .a little work, but very tasty and goes great with any beef dish (as you can see from the pics) ... .[p]http://www.biggreenegg.com/archives/2005/messages/179675.htm
