We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer. I've got a 3.5# sirloin steak that's about 2.5+ inches thick. I like my steak rare but the rest like it no more than medium-rare. Does 5 minutes a side at 650+ then dwell for 5 minutes sound about right? I figure I'll get the center of the beast and the others will get the outer parts.
