First Butt Questions

I've got family in from out of town the next 10 days and would like to prepare some pulled pork and I have a couple of questions.[p]What is a good size chunk for 10 people allowing for lots of left overs to split up with the guests?[p]Is there a per pound cooking time for the meat?[p]Do I need to brine the meat first, if so how long?[p]Suggestions for a recipe? Side dishes to grill with it?[p]Thanks, Stuart

    Stuart,
    1 pound pre-cooked weight per big eater is a good safe number. More if you want leftovers.
    Per pound times are tricky, as weach butt is different, but 2-2.5 hours/pound is a good estimate.
    No brine necessary. Just a rub,or a mustard slather and rub works great. Classic side dishes include beaked bans and slaw.
    Serve on plain white hamburger rolls.[p]Have fun!

    Don't forget the japaleno corn casserole!!!That is a must. you can find it in the 99 Eggtoberfest recipe section. Goes great with anything, but with pulled pork you will slap your mother-in-law.

    I have a feeling once I do, it will be a regular thing!! My mom-in-law only likes Vietnamese food...so I'm safe there!
