'Sup BBQ junkies!!!  That say fish taste better if you catch 'em yourself. I think that needs to be amended to read: if you catch 'em yourself and then grill 'em on your Big Green Egg. Here they are, bacon wrapped wahoo steaks for your drooling pleasure!

Wahoo is like a big king Fish, a big mackerel. Darker, firm oily fish. Perfect for grilling or deep frying.
Also known to have higher Mercury levels.

We used to deep sea fish for years in Turks & Caicos and Wahoo was our most frequent good catch.  Good fighter.  When the sharks got half on the way in we knew we only caught a Wa.  Great eater.  We'd eat the cheek meat raw at the dock.  Great memories.
