Smoked Pickle Experiment

I did a pantry / fridge dive last night to find something to cook today. The dive resulted in small dill pickles halves stuffed with cream cheese mixed with lump crab meat, shredded cheddar, and rendered chorizo, all wrapped in bacon. 

I smoked these on the Egg at 275 with some apple wood smoke until the bacon looked done. 

It looks nice. Taste - just OK. The lump crab meat doesn't dance well with the chorizo and the pickle. 


It was a fun experiment, but next time, skip the crab meat.  :)
