Suckling Pig Christmas Eve Meal

Cooked a 10lb suckling pig! Heritage breed and TENDER. Used the house rub from Miami Smokers which is paprika, chili powder, garlic, butter, soy sauce, and a bunch else. 12hr dry brine and two hours with the rub before smoking. Large egg at 225 for three hours until 160 IT then at 600 degrees for 30min to crisp up skin. I’d probably do 45min next time. Rested for 45min and garnished with grilled onions, garlic, lime, and cilantro. Absolutely tender and delicious!! Got ate up fast with 10 adults. Merry Christmas!

    The last pig cook I was involved in was 150 pounds. 

    Ten pounds? That's very close to embryotic.  :o

    It was crazy small! Butcher thought it was two weeks old. Was perfect for 10 of us but no leftovers. Fit stretched out all the way on a large egg!

    I definitely didn’t wrap the ears well enough though.

    The face was the best part!! The kids talked about for a good while. Tried to fit the smallest apple I could find in its mouth but there was no way.

    Side note, used apple wood.

    But something about the size of that piglet looks like an anti pig abortion video.

    Now that's stepping way out of your comfort zone.  Congrats on going for it and then bringing it home.  Great cook and result.

    I should’ve taken a photo but I can’t even explain how small the ribs were. Very very small. The ham fit in the palm of my hand.

    No offense, but even having a pig at this age and weight butchered and offered for sale weirds me out. Don't biology students dissect pigs of this size? 

    I can see suckling and young pigs 30 or so pounds and up..........just something about an almost newborn 10 pound pig that that I can't see.

    But this is just me and my sensibilities.

    Totally respect that. Actually had a med grad at dinner and he said the one he dissected was much smaller.

    i was gonna spring for an 18lb pig but this was the last one available. My views are it’s going to get eaten at some point. Still understand where you’re coming from!
