Beer Can Chicken sans can

I drank the beer from the can instead of sticking up a chicken's butt. Ran it at 350*-375* indirect. Seasoned with 3 different rubs and canola oil and sat in the fridge for 4 hours to help dry the skin before going on. Ran for 1 hr 15 min before pulling at 162* breast IT. Skin crispy. Meat moist. Almost over cooked the breast meat. In the last 15 min I redlined the Egg to bring it home and crisp the skin. Had it up to 450* at the end. Spatchcockers be damned. This was good.

I've never really understood the purpose of the can. Whatever liquid is in the can doesn't appear to boil, imparting flavor.
I could be, and most likely am missing the whole theory/concept.

And I have sing the praises of an Organic Bird. This was the Kroger Simple Truth brand. Chicken is one that we prefer to go organic free range whatever it is. Tastes better plain and simple.I like my butt rubbed and my pork pulled.
