Called an audible that worked

Wife and I headed to Asheville for an early anniversary trip. Anniversary is next week, but her parents couldn't make it down next weekend. Just a quick trip. Up on Friday morning, hang out, and head home after lunch Saturday. First one without our little girl. Turned out to be a great trip and my little girl loved extra time with Mimi and Papa.
We got back Saturday around 3pm, I cooked some Mongolian beef on the Egg, and after that I was pooped. I planned to cook a brisket and some split chicken, but just didn't feel like doing the prep work. So, what did I do... Called an audible.

Teeter had Porterhoused on sale for $7.99lb (for their Rancher brand, which is a supposed to be a little better). Got two big steaks at roughly 2.5lbs each for us (invited my brother and niece over). In laws headed back around 2pm.
Did some potatoes on the medium. Those always turn out fantastic.
Wife did an apple crisp using the same recipe for the peach crisp she done two weeks ago.
My brother brought over some corn on the cob he made in his Power Cooker XL (he loves this thing).
Any who, here are some pictures from this. I went very simple, but dang it was so good.
1 - Seasoned with salt, pepper, Cosmic Cow

2 - Taters rubbed with canola and salt.

3 - Reference of how big these dudes were.

4 - Spuds are done. 450° for around 1hr. I used my thermapen to test doneness, appears around 200° is a great temp.

5 - Another reference

6 - The medium was rolling!

7 -

8 - Had this CI pan on the large idling with some Kerrygold to baste the steaks in when they were done. I also dusted the steaks with sugar and season salt every time I flipped.

9 - Didn't get a plated shot, this will have to suffice.

Yes sir, indirect. Though I don't have means of cooking indirect on the medium, I took the stone from the Joe Jr, placed on two fire bricks. Worked pretty well.saluki2007 said:Great as usual Matt. I've never done my taters that high of a temp. I'm assuming you went indirect?
Even in the oven we go 450° for around an hour. At the restaurant we went 500°.------------------------------

The sugar and season salt adder is very good at making a nice crust, especially along that piece of fat on the out side.

I posted the below a couple weeks ago, but used peaches. She used 3-4 Granny Smith apples for the apple. The sauce wasn't used with the apple either.

Damn dude. That has all my favorites. I had almost an identical meal yesterday only my steak wasn't as thick and it didn't look nearly as good. For my tastes, this is probably the best meal I've ever seen posted here.

It also works well with coffee too. One part season salt, one part sugar, one part coffee. Dust the steak with every flip.DTEgg said:Hungry now! Looking awesome...sugar, have to try that...
