Unc, beef suet and/or lard work great for a griddle. They were used long before vegetable oils became the norm. With that said, it's a griddle. Use whatever you have available. Can't really go wrong if the griddle sees steady use.

Hotch and I just had a conversation about this very thing. My Blackstone was beautifully seasoned at first but the more I used it, the more I saw big splotches of missing seasoning. I asked him for suggestions. His answer was a lot more complicated than just using any oil.
Maybe he will jump in and explain it. The restaurant we were in was a bit noisy so I missed a lot of what he said.
He mentioned Flax Oil because it has a low smoke point. Yes, "Low". I've used many different kinds but never Flax Oil. I have some Grape Seed Oil that I thought I would try but I may pass on it after talking to Hotch.
He even mentioned that if the Flax Seed oil wasn't purchased 'chilled' it probably won't work well. Or something like that.
What he was saying all made pretty good sense, especially about applying repeated (very light) coats.
He'll have to tell it. I'll wait with you. But right now I've got to duck for cover.

I couldn't find flax seed so I used grape seed. Is that a problem?

I used flax oil. I ended up finding it at Sprout's. (Check any of these new health food small format grocery stores.) the flax oil does have a very low smoke point but it seasoned perfectly. I agree that we don't need to make this more complicated than it should be. Use it often and good things will happen to your surface.

I purchased the small one. I used peanut oil. Only one cook. My initial thought is it has some serious hot spots. Would some type of diffuser solve that. I'm not as impressed as I thought I'd beGreen egg, dead animal and alcohol. The "Boro".. TN

That is because you used peanut oil.
Cold pressed flax seed oil also evens out the heat distribution.
Plus, the smaller blackstone has more hot spotting than the 36" model.They don’t want a population of citizens capable of critical thinking.
