    Thanks guys. Family from CA are coming to visit.  Staying with us for the weekend. Yay..

    The request was for pork chops for one meal.  Last time they came, I got individual chops. As the meal was ending and we were just chatting they cut the bone off the last 4 chops and ate just that part.  Really? Who would do that?   I would think about it, but actually do it?

    I have not decided if I will cut these into chops, or leave whole as a roast.  Hmmm....

    @dmw, we should get together one day.  You are not that far at all.

    Meat is seasoned and ready to put on the egg. 
    Seasoned with garlic, pepper, thyme and some crushed rosemary.

    @pescadorzih. It snowed, but not that much.  For a long time, but little to no accumulation.

    325 for most of the cook. Temp at the end was raised to 400 for the last 30 to give it more color.

    @pescadorzih. The brining worked well. I usually do brine pork roasts unless it is exceptionally marbled.  This one went 12 hours in the brine. I do not think it does a lot for flavor or tenderness, but I do believe it assists with juiciness.

    @QingEsq nowhere special. Costco.  Actually the first time I had a pork roast from them.  Since the local grocery store closed and now I can not find the "premium reserve" pork, I have been getting a lot of cuts from Costco.  But if I ever find the "premium reserve", I am buying a case of it.

    Thank you for all the nice comments everyone. I have been exceptionally busy the last few weeks. Not cooking too much, but posting when I do. I love to cook and share them with you all because most people are like "why are you taking pictures of your food? ". They just do not have the same appreciation.
