Mainiac bowl of red

made up my own recipe =)

dry peppers
5 habaneros
3 passilla 3 california
3 ancho
3 gaujillo
3 de arbol
remove stems.  simmer in beer 1 hour
peppers seeds ribs and all into food processor then added to seared 3.5 pounds beef cubes

saute
5 jalepinos
3 seranos
2 hungarians
1 red bell
1 onion
5 cloves garlic

herbs and such
2 tbls oregano
3 tbls cumin
1 tbls onion powder
2 tbls paprika
1 tbls salt
2 tbls masa harina

into the mix with 2 quarts beef stock for three hours =) did i break any rules =) no darn beans, no darn tomatoes



best darn mac as well, gorganzola with bacon

    Wow, that looks great. Had to cut out mac and cheese, but if that was around I would have to sneak a taste or two.

  • I wrote on someone's post a few weeks ago that the food pictured was the best looking food I've seen on this site.  Well, that just moved to 2nd place.  This looks unbelievable and the chili...with all those wonderful peppers. Awesome!!!

    WOW! Over the top there fishless! Obviously you have a stronger seasoned gut than me - as I would have been exploding for the next 16 hours. Trust me - I'm just jealous.

    last november i broke a toe getting the dog out of the house at 2am in the dark for those same obvious reasons =) i discovered south american crema a few months back, it goes with spicey chili like ice cream over hot apple pie.

    You forgot to add the last step of installing a seat belt on your toilet.
    after making this one i believe that problem goes away with removing both the beans and tomatoes and this was pretty spicey

    My boss and I had a contest one day to see who could eat the most scotch bonnetts grown in our receptionist's garden......I thought eating them was miserable until the next day.  I never knew using the restroom could burn that badly!!!   :o

    for a lasagna tray double the recipe, 1 pound bacon, and have extra gorganzola to melt on top. i used cabots aextra sharp for the cheddar.

    Break any rules? LOL, the only chili rule is that chili don't need no stinkin' rules! 

    For me, I would have done two onions instead of one, and added an orange or yellow bell pepper, for the color. And I would have added a couple tablespoons of cracked black pepper, for that different kind of heat.

    maybe i need to start replacing the jalapenos with dried ghost peppers =) it was spicey but by no means hot hot hot

  • I think it would only be proper to notify your local wastewater treatment facility prior to having a bowl.. They might need to add on a second shift.. :o

    That my friend is a damn fine bowl of Red! Nicely done from scratch, it is always the best way. I'll bet it was better on the next day, if it lasted that long.

    Made the Red today using this recipe.  Turned out great!  Best bowl of chili I've had since I lived in south Texas in the early eighties.  Thanks for sharing

    No kidding!! I can't even find anchos! Fresh habaneros and jalapeños is all I find anywhere. Occasionally poblanos, but that's it! Nothing dried.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    No kidding!! I can't even find anchos! Fresh habaneros and jalapeños is all I find anywhere. Occasionally poblanos, but that's it! Nothing dried.
    does market basket make its way that far south, they have a couple different dried peppers in the root section where the keep the strange things like yuuka root etc. found serranos by the jalapenos last time but those are never there
