Popping my cherry on SRF Brisket

Options
Firing up a SRF brisket tonight. My first and probably won't be my last.
12.7 pretrim weight. 
Planning on 10-12 hrs at 225-250 with oak.  and pecan.
Wife likes the coffee rub on brisket, so on it goes.

    Have my first in the fridge. Was going to cook Saturday night, but had dinner with some friends last night and he mentioned really liking brisket. Now I'm holding off until they can come over.

    Nah, 185* to start checking. Earliest I've had one finish is around 187*. I can't imagine finishing at 175*.

    Run at 250* and I'm guessing 12-14 hours. It's safe to bump the temp up in the AM if tracking slow. These are much more forgiving that what we can typically find around here. I think you could totally overcook it and still have a great result.

    @pescadorzih - wait on the thickest part of the flat to get loose.  You will be justly rewarded.

    Its just starting to loosen up. I thought it would be done at a lower temp. Its at 199 now.

    I was mistaken.  I was going by the guru probe. I just inserted my Thermoworks Dot and it is reading 189.

    Meat at 198. Thickest part of flat still tight. Rest probes like butter. 
    Bumped the temp to 325. I need this done soon so it can rest. I have other things to put on the egg.

    I assume the same thing goes for the brisket as the meat from there I've been cooking lately... It's very forgiving. Cooking my burgers well done and they are so juicy and tender. Fool-proof! I've tried SRF brisket and its outstanding. It has a slightly different texture to it, but great.

    @bhedges1987 - definitely there with the different texture and wider finish window.  With brisket, it can catch you a bit off-guard at first.  But after that...
    On a routine basis, I'm good with Costco prime briskets but do like to indulge in the SRF on a reasonable (to me) interval.

    I assume it's off by now.  Keep in mind that if you're just waiting on one spot, but the majority is good, pull it.  It will usually get right during its nap.  
    Just a hack that makes some $hitty BBQ....

    Yeah, but you have easy access to Prime brisket. Here in PA, that's not the case.
