I have used my anova just a few times with good success. I have been using a deep boiling pot which limits the amount I can cook. Any recommendations for a larger (4.5 gal) plastic container. And what do I need to keep the vacuum sealed pouches from floating and to keep them separated for complete water circulation?

For the container, I bought a 18 quart cambro. I bought mine from restaurant Depot. Here is a link to to the one I have:

@Canugghead - that same item has been used as a rib rack as well, so maybe buy 3
@eggo -I weigh bags down with a heavy plate sometimes. Works well to keep things submerged.

I ordered the polypropylene container from Amazon. I like the lid separator and will check the ikea store.

I tried clips used on chip bags and they worked so so. The binder clips will probably hold better. Thanks for that suggestion.Eggo in N. MS

i didnt worry about keeping them separated. plenty of flow between them with my setup. i guess if i wanted to i could have put one on each side of the container using multiple clips though

How about clipping them to a chopsick or something like that laid across the container???

Immersion circulators are not the only type of sous vide device. Some are just a tank of water heated from the bottom/sides and there is no flowing water. Think crock pot or the SousVide Supreme water ovens. There will be thermal currents of course but it's not like the jets in a hot tub.

Here's what I concocted. Seems to work pretty well plus it's insulated. It's a 25 qt Igloo. The grid on the lid made it really easy to cut out. As far as keeping things submerged I use some old 6in ceramic tile that I make sure are really clean.
