We hosted a New Year's Eve party last night and made it appitzers. I did a pork fatty explosion and cheese stuffed meatballs with some wrapped it bacon. This was my first time at doing the fatty and it will be fine again.
2lbs Jimmie Dean Maple sausage
Pepperoni
Hard salami
Pepper Jack cheese
Andouille sausage
1.5 lb or so of bacon
Weave bacon together on wax paper and set a side.
Put pork sausage in gallon zip lock and roll flat with rolling pin.
Cut bag, place sausage on wax paper.
Place about 6 to 9 pieces of cheese.
Place on top of that a layer of pepperoni, a layer of hard salami and a few more slices of cheese.
Cut Andouille in have, place at the bottom.
Rolll up everything using the wax paper then transfer to bacon weave.
Roll bacon around pork with wax paper. I placed a couple half pieces bacon on both ends to cover up the ends.
I sprinkled the outside of the bacon with slaps squeal like a pig barbecue rub.
Got egg set at 225-245 with apple and pecan wood indirect. Put on fatty, cooked for 2.5 hours and transfered to oven at 275 when it was 145 and finished it to 165. I would have finished on egg, but needed to cook meatballs. I wish I would have finished on egg, some of the drippings got on the bottom of the oven and smoked up the house a little. The fatty was awesome and can't wait for leftovers today.
The meatballs were pretty simple, mixed about 3.8 lbs of hamburger with 1.4 lbs of Italian sausage. Added an egg and some R Butts R Smokin rub. Rolled meatballs around Sharp Cheddar, Colby Jack and Mozzarella cheese square's. I wrapped the Mozzarella ones with bacon, but should have cooked the bacon a little bit so it would crisp up or cooked them direct instead of indirect. They were good, but could be better. May freeze the leftovers and put in BBQ sauce for the Supper Bowl.
One neighbor brought chicken wings, another brought Buffalo sauce for them. Little smokies, cheese dip, M&M bars, Oreo cookies truffles, meat and cheese platter and chicken tenders with fries from Arby's. A ton of food it looked like.
