Brisket flat attempt #4

I've been lurking in this group for a couple of years now gathering a boat load of knowledge from everyone on here. So, thank you for that. I'm done lurking and wanted to join the fun. I'm attempting a brisket flat today. It's the one thing I just haven't been able to get right. I have a 7lb flat from Costco on there now. It only took 3.5 hours to hit 165 and the stall. Wrapped in foil with a mix of beef broth, Worcestershire and balsamic and currently sitting at 197. It doesn't have that smooth as butter feeling all over when I probe so lettin' her roll a bit longer hoping to not over cook (as all my previous attempts). Got a few pics so far.

Looking good. Flats are a Tough cook IMO.

You didn't mention what temp you had the egg at ...I've slow smoked and eaten so much pork, I'm legally recognized as being part swine - Chatsworth Ca.

Egg was at a steady 250 degrees. I ended up pulling it at internal temp of 203. It was buttery in most sections. FTCing now and have ABTs and beans on the egg at 300. ABTs are stuffed with cream cheese and andouille.

Great cook right there-congrats.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
