Buttermilk Pancakes

Good morning Eggheads,
I'm enjoying a beautiful relaxing Sunday morning around the yard. I decided to fire up the large and make some buttermilk pancakes for breakfast. I whipped up a batch from scratch while the Egg stabilized around 300*. I use my cast iron fry pan and add a healthy amount of vegetable oil cause I prefer my cakes a little crispy / fried around the outer edges. A couple minutes per side and one flip later, they are on the plate with some syrup and fresh fruit.
Tasty and easy breakfast while I lounge around my pond and relax with the peace and quiet.

As you can see its no secret family recipe or anything, just one we have enjoyed. I tweak a few of the method instructions for cooking them on the Egg, but mostly stick to the recipe. As mentioned, I like the crispy edges, so I change butter out and use cooking oil to grease the cast pan.
Hope you find this useful
