Pastelon Attempt (lots of pics)

I tried my hand at making the Pastelon recipe provided by @Nuke1855
Not quite sure if it came out right - I omitted the cream cheese and doubled up on the regular cheese at Kurt's suggestion on how to eliminate the cream cheese. Doesn't look like it is going to stay together when it is sliced. We'll see if I screwed up. My wife is excited - says her grandma made this all the time, but it didn't look like this.

Forgot to take plantain frying pics. Oops. Wife was stealing fried plantains as I cooked them.
Assembled and ready for the egg

Cooked foiled for 15 minutes and the uncovered for another 15 at 350 direct. Finished product.

Will post sliced pics later when we eat it.
