Ribs Tonight

Had an urge for ribs. Picked up a pack of baby backs at Costco on Friday.  Put some Kirkland Rib Rub on them and fired up the egg this afternoon. I though I'd try the "turbo' method. Put in some cherry for smoke and fired up the egg. Put the ribs in at 350 and left them for about 1:45. Gave them a check and let them go another 20 minutes. Pulled them and let them rest for a short while. Turned out great. Not falling off the bone tender, but a really good eating texture. And the best news was that the rest of the family weren't here. So with just Mrs C. and I, there are lots left for lunches this week.

Here they are spiced and ready to go.

And on the egg.

And finally, ready to dig into.

    Those look great!

Are the elves considered part of "the rest of the family"?

Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

Nice cook.  I guess it's about that time of year to put on the weight to fit the Santa suit.
