Chicken fried rice for dinner through the weekday

I cook many meals on Sunday for the week so we don't have to cook when we get home from work.  With a 14 month old, it is tough to get many things done.  

Did some chicken fried rice and also some marinated chicken breast that I cut up to get more flavor.  


Rice consisted of: 

Jasmine rice
Fresh bean sprouts
Cabbage
Green onion
Green pepper
Red pepper
Carrots
2 Eggs
Chicken (marinated in ginger, garlic, canola, soy sauce, dijon mustard)
Ginger, fresh
Garlic, fresh
Soy sauce


1 - Get the ginger and garlic nice and small.  I use a microplane.  




2 - The setup



3 - Fried the egg first





4 -  Then veggies





5 - Then chicken





6 - Then rice.  The fire was screaming hot!  Good pair of heat gloves are recommended. 




7 - Then add all ingredients when rice is nice and dry and crispy.  




8  -  The finished product



9 - The grilled chicken and burger for the week (burgers are for my lunches).
