Mother's Day Clams and Tuna Burgers

Clams and tuna burgers per request of SWMBO. Used the new cast iron (thx for the recommendations in another thread -- bought the lodge 14 inch pizza pan).

Did you grind that tuna? Looks like a fine meal.
That at slab of tuna would have a hard time finding the grill around here. -
2 lbs of ahi grade. Wouldn't typically burger-ize it, but was a Mothers' Day request. Pulsed it briefly in the food processor with scallion, a little panko, soy vey and a bit of sesame oil. This time around it was 3 doz littlenecks (sat them in a bowl of salted ice water + corn meal for about an hour so they'd filter out their grit); then into the drip pan with some diced pancetta, white wine, garlic and parsley. I threw in the end of a bottle of garlic expressions (an expensive vinaigrette) that was taking up space in the fridge. Onto the grid til they open. Good to serve with crusty bread (if you're not running carb-scared). Even better to make them "angry" with some crushed red pepper flakes cooking in it (if your kids will let you). But no matter how you cook them, they disappear quickly.It's a 302 thing . . . -
