Disclaimer... I am new to jerk seasoning and I've never had it prepared by anyone else. I do know what I like though. And I really like what I have tried so far!!
I have used Walkerswood Mild Seasoning (the thick paste) and thought it was very tasty. Second attempt I minced up a small habanero and added it to the mild paste. Even better!
I want to try their Hot version, but can't find it. That's why I added the hab. I finally found Grace brand hot seasoning. Tastes very much like WW with minced hab added.
I tried egging both chicken and pork with and without allspice berries (in a foil packet punched full of holes for smoke). Don't bother with them IMO. Doesn't seem to make a difference. Haven't used Pimento wood so I don't know about that. I used white oak for smoke wood every time.
Egged some chicken tenders with Grace (hot) on the mini last night. Excellent!!
I hate it when I go to the kitchen for food and all I find are ingredients!

Walkers wood is really good for a store bought sauce.
