38oz Tomahawks that I had the trim back the bone a bit so fit on the Large.  Reverse sear with salt, garlic, and black pepper. On at 275 - 290 or so indirect and raised. Pulling the first one at 115 and the second at 125.   Let rest and get the sides or mushrooms, fries and salad going a bit. Then back on at 550 or so direct for a couple of minutes per....maybe longer.   We like a good Pittsburg style black crust.  In progress now so this will get you started.
