Tomahawk Rib Eye Steaks

38oz Tomahawks that I had the trim back the bone a bit so fit on the Large. Reverse sear with salt, garlic, and black pepper. On at 275 - 290 or so indirect and raised. Pulling the first one at 115 and the second at 125. Let rest and get the sides or mushrooms, fries and salad going a bit. Then back on at 550 or so direct for a couple of minutes per....maybe longer. We like a good Pittsburg style black crust. In progress now so this will get you started.

Doesn't look like much now but just wait. Pulled the first at 115 and it continued to rise. Pulled the second at 125. They are resting now.

Money shot. They were outstanding. Also, I love the thermoQ. I also have the adapter to my Stoker so my Type K probes work on it as well. I would highly recommend this unit.

Pat Lafrieda Black Angus Prime. Dry Aged for 30 days. I splurged. They fed the 4 of us which included 2 15 year olds so plenty of meat. I have 2 more in the freezer..should have had all my BGE Columbia brotheren over. Bone is presentation only. I had to hacksaw off at least 4 inches to make it fit.
