1st Turbo Butt

Had to run down to VA for a customer today and didn't get back till1:30 but wanted to cook something tonight. Made a beeline to the market and found a 4 LB Boston Butt. Ran home, got the Egg going ASAP, rubbed it with Bad Byron's and put it on @ 350. 4 hours later, pulled it and had a great 1st butt! Only thing I need to change is to put the hickory chunks in the middle, not the perimeter as the pork needed more smoke. All in all, pretty happy..

    To get more smoke, start at a lower temp. Like 250. Then when it hits the stall, foil it and bump the temp to 350. It will cruise right through the stall. Injecting helps too I've found, but it's controversial in these parts...
