Going to try my third brisket on the egg. Haven't quite mastered it yet, but going to swing for it again!!
This time I picked up a usda prime packer, 14.5# from Costco in Dallas and shipped it home to Florida.
Salt and pepper rub, 250 until it's butter. Hoping it will be about 12-14 hrs. Oak for smoke.

Great eats await, especially if you slice and eat the point and don't go down the burnt ends path. But it's your hunk of beef so enjoy any way you like. Wish I was wrestling a brisket this weekend.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

With a Prime brisket Costco you should be in great shape.

Don't know about Creekstone briskets but the SRF Black is a wagyu cut. (Not yet ready to step-up to their "Gold"). No meat junkie here but the SRF brisket is an order of magnitude better than any prime cut I have had. But I will gladly take a prime brisket any day. Only wish the local Costco had a more consistent prime packer availability. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! I may try a creek stone next to avoid the hassle of importing from TX. Also depends on how this cook goes.

Excuse the dirty egg, I've been gone for a few weeks. But she's settling down around 250-275 for the brisket. Also got a little fire going down here in Florida for our cold temps. ;-)

Blake, by the way. Academy has a 45lbs bag of "western" oak for $12. It's not post oak, but mini logs, and I'm giving it a try.

Nice! Just bought some Dr Martens Industrial Steel Toe Airwair boots from them. This means I'll have to go back. I already have 50# of oak chunks but, that's a great price so I'll probably get that too. Lord knows I'll use it. I went fat up, platesetter, old fashioned. This is a long skinny brisket, so AR didn't seem to be best this time. Had to curve the brisket a little ony XL. pics in the morning.

Maverick kept an eye on temp for me overnight. Didn't go off once, stayed between 215 and 260 grate temp. Last night when I went to bed my dome temp showed 240-250. When I woke up this morning it was 315. Grate temp remained the same though. ???
Meat IT is 170. -
The turkeys came to see what I was cooking this morning as well.

Quick question. My briskets in the stall and the bark isn't what I want yet. Should I keep temp steady and just let it roll, or bump temp up?
