MY FIRST PRIME RIB CHRISTMAS DINNER

I picked up a 5 lb 2 bone rib roast at costco yesterday. Used the reverse sear method from nibblemethis including the rub.

The egg didnt want to settle at 250 (very windy day) so it stayed right at 300. Left it on until it reached 120 inside (about 2 hr 15min) and then pulled it off to rest while i cranked up the egg to 500. seared on each side for 1 minute a piece then back off to rest for 10 min. Temp was at 133 right before slicing.

Got to try out the new set of Shun knives I bought the SO for Xmas. I highly recommend them if your in the market for a new set. Now on to the pictures!!
