First Large Cook For Brother's 60th. (PIC HEAVY)

Last Friday on Halloween I cooked around 63 pounds of meat on my XL for my brothers surprise 60th birthday party. I put on 7 slabs or baby backs and 7 pounds of fresh sausage at 9:00 am at 225 to 250 for 4.5 hours. After that at 2:30 is put on a 15.5 pound prime brisket and 19 pounds of pork butt on at 250 to 275 for 7 hours and pulled them all off when they reached 150. My plan was to finish them the next day on Saturday to 195-205, but I should have finished them then just heated them back up like I did the ribs and sausage. The thin part of the flat got to 195 first and I cut it off so I could feed people. The pork but was at 180-185 on one end so I cut part of it off and sliced it instead of waiting for it to get to 195 to pull it. They both tasted good, but weren't as tender as I would like. The ribs were the biggest hit and I am glad I cooked 7 slabs. After the party I had 3 slabs of ribs and one pork butt left that i didn't serve. We did have some other meat left too and people took some home. I kept one slab and gave one to my mom and one to one of my nieces who now loves ribs if I am cooking them. I think I am going to put the remaining pork but on the egg or in the oven tonight to finish it so I can pull it and freeze it for future meals. It was a lot of fun and a lot of work. Next time I am finishing everything them reheating it if needed. My brother has taken a job now where he is charge of officials for the NAIA so we all dressed the proper shirt to surprise him. I also got to watch a little Division 2 football.

    Did SGH show up?  Once you cross the 40 lbs meat barrier he just seems to find your house....    :))

    Looks great and good fun.   I agree on the cook ahead, specially with a crowd.  Maybe some finishing the next day but it is tough to tend to a cook while you are also entertaining guests and want to enjoy things yourself.

    Thank you for all the complements. I would like either a small or medium egg to go with my XL or the Good One Heritage Oven like this one below in an outdoor kitchen. It was a lot of fun doing, but it kicked my butt, because I was also working on building shelves for garage. I have enough pork butt for a while now.

    Thank you sir. My brother has been an official for along time and he has a dream job with the NAIA where he is encharge of all officials for all sports played in the conference. I like seeing him happy and he and his family is moving closer to us and his second daughter in a year and it will be nice having him close. He came and visited me while have been the hospital recovering from hip replacement surgery. That was a very fun day for all and the food was good too.
