I've been pondering what to do on the egg for Husker Game Day this coming Saturday. Then eureka I thought, I'll make something from the past and do it on the egg. I won't divulge what I'm doing because $hi+ hell fire then I won't have the element of surprise. :))
All these cookbooks are Circa 1955-1975. Most of them are from my hometown of North Platte, NE and the Fitch cookbook is a family cookbook from my Grandmother's side. Go Huskers! GBR!!!

Good collection you have. I collect old cookbooks....Word to the wise: if published before. WWII cup may really be a tea cup and tablespoon can be a dinnerware tablespoon. Some of those old recipes are good eats.

My parents live in Grand Island, about halfway between Omaha and North Platte. She has the Betty Crocker Cooking for Two cookbook as well! I've seen it in her kitchen. It's in about the same shape as yours.

I look forward to seeing what you find in those gems. If it doesn't work out, let me know. I'll send you a slice of Valentino's pizza, a bottle of Dorothy Lynch, a Runza and a bowl of chili with a cinnamon roll. GBR!!

Here is one of my personal favorites for old recipes. The book it's self isn't ancient, but some of the recipes have been traced back to the very early 1800's. Some of it I won't even try. And that's saying a lot my friendimage

Most of the recipes in the book are so old that they call for the use of "suet". This is the fat from around the kidneys.

I've got a bunch of ole Texas cookbooks that call for suet as well.

It's actually quite good. Just very hard to come by these days unless you render it down yourself. It's funny how things change with time. Suet was once more available than lard or vegetable oil. Just curious if you have ever tried it yourself? If so what did you think?

You can pretty much use lard and suet interchangeably and not notice much of a difference either way my friend.

Good to know. If only I could remember what recipe that was in. I know I have seen it in some chili recipes.

If you are close to a slaughter house most will gladly give you kidney fat for free. Then you merely render it down and you have suet.
