I'm trying my first beef tenderloin on the egg. It's been on for 45 minutes so far and is at 99 in the thin part. Should I pull at 115 and tent tell guest get herected to sear steaks?

Sorry, I'm guessing it's pulled. I'd go with your plan if doing steaks.

It looks like it'll be great my friend.

This is the best thing I have cooked on the Egg. It came out awesome. Everyone loved it. I took photos while cutting, but they didn't come out. Here are some when I took it off and what is left of an 8 pound beef tenderloin. I cooked it at 300 to 350 for 1.5 to 133°. I pulled it, covered in foil to let it rest and cooked veggies. There was a lot and they took 20 minutes to cook. I will be doing this again when I find it on sale.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.

Those are heat resistant neoprene ties I got at my Egg dealer instead of using butchers twine. They are reusable. They are cool, they seal them in a box of 4 or in singles.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo. -
Neoprene? Like scuba diving? ;-)Louisianian by birth, Louisianian by death. Austinite for now...

I used the wrong word, they are made of silicone not neoprene. That would melt of course.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.

That looks great. I think that is the best way to buy steaks

I am going to cut what is left in to two 2" pieces and sear them on each side for about 2 minutes each at about 400° to 450°. Do you all agree?XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.

I absolutely concur. Cut and sear it brother. Wipe it with a little melted butter after the sear and enjoy!!
