Just had to thank Eggselsior for the very generous and totally unexpected gift of a Snake River Farms brisket. Cooked it today and it was really, really good. As I think everyone else on here that has done one says- these are special. The first thing you notice is how "clean"'the fat is. It's crystal clear and not really "greasy" like normal Briskets are. Also, the flat is as juicy and flavorful as most points that come from traditional Briskets. The quality is unmatched among any other I have cooked.

@Cen_Tex-quite a way to resurface on the forum. Most eggcellent cook! Definitely a grand-slam home-run!! Did you use butcher paper or foil at the close of the cook? Wondering, as I plan to do one (SRF) as my Father's Day gift to me.

No but I probably should have. It was a beautiful mahogany color for most of the cook then got a little crusty.
