Thanks to all of your great advice I've been reading about, this baby was DEEELICIOUS!! Byron's butt rub only. Put her on at 6 this am and pulled it a few minutes ago at 195 degrees. Cooked it at 275 for 10 hours then bumped it to 350 when I stalled at 190. Wife had to go to work and I wanted her to have some before leaving. I will probably do the turbo method in the future I plan on doing a brisket for my next smoke
