Not bad. Never seen one in person, until now. This steak is growing on me, and I'm not a huge Filet guy. -
What a pretty piece of meat! I am anxious to see it plated. Please let us know how it cooks. I am just wondering if having the bone attached would make it difficult to cook evenly? My experience with filets is that they cook rather fast.

I'm going to sear it 3-sided, instead of just searing on either side.Something like sear 3-minutes face, stand the steak on the bone & sear 3-minutes on the bone, sear 3-minutes face. Check for doneness, and if needed further cooking, to allow to "roast" on the bone, standing up, so all sides get hit with even heat.
