Cooked Fresh Yellowtail Steak (pics)

Mini, direct, 350F dome. My first direct fish cook. Salt and pepper and then on the grill. Twenty minutes each side. Coated it with a mixture of mayo and sweet hot pepper sauce the final five minutes. It was the best fish that I have ever eaten!imageimageimageimage

    That's no Yellowtail, maybe Yellowfin, sure hope it was medium rare and you had some wasabi nearby!

    Yup Yellowtail. Pacific Yellowtail. A very common sport fish in our Pacific Coast area. Seems that there are over 100 fish with the name Yellowtail.  Check it out here:

    20 min a side seems a bit much.  What temp did you cook to?

    350F dome, they were 1 1/2" thick. They were perfectly done!

    That looks like a huge cut. That is the nice part of being near the source. The setting on the plate is nice too.
